Fresh Herbed Cucumber Toast

I guess I wouldn’t be a proper millennial without indulging in some kind of “extra” toast so here’s our favorite to kick-start the day. The bright green herbs look so delicious and almost too pretty to eat and if you don’t have these particular herbs on hand, you can substitute others like basil and mint for equally good results.

Ingredients

  • 2 slices of multigrain bread

  • ¼ cup cream cheese

  • ¼ cup sour cream

  • 1 teaspoon extra-virgin olive oil

  • 1 teaspoon lemon juice

  • coarse kosher salt

  • 10 cucumber slices

  • ¼ cup green olives, chopped

  • ¼ cup mixed fresh herbs, chopped (we used fresh dill, parsley, cilantro, and thyme but you can use what you have on hand)

  • 1 tablespoon chives, chopped

  • 1 tablespoon almonds, chopped

  • pinch of red pepper flakes

  • pinch of sumac

  • a pinch or two of Za’atar

Preparation

  1. Toast your bread slices.

  2. In a small bowl, mix together cream cheese, sour cream, olive oil, lemon juice, and salt.

  3. Spread mixture over each toast slice and top with cucumbers.

  4. Top with green olives, mixed fresh herbs, chives, and almonds.

  5. Finish with red pepper flakes, sumac, and Za’atar.
